A surprising twist on the offal-laden blood stew, totally giving the texture a complete 180 degree turn. From a previous gelatinous feel of offal to crispy and crunchy pork, reminiscent of chicharon (crispy pork rinds). From a thin soupy consistency to a heavy and viscous sauce. Ingenious!
